I had always been interested in various BBQ cuisine, but in the depths of lockdown in 2021 I started to research and follow Smoker Cuisine Chefs in the USA and Canada. After a chef’s development day led by Andy Daniels at New Farm Catering on smoker cuisine, this gave me the idea of finding or building my own smoker and branching out to set up my own Smoker Cuisine business as we came out of Covid.
My online searches led me to a tree surgeon in Great Yarmouth, Norfolk who was keen to sell his custom built BBQ Smoker with insulated firebox. The Smoker was quite a beast and had been well used over the years and clearly needed a lot of TLC but with the help of a trusty Ivor Williams trailer fellow chef and friend Chris Scarratt and I steered her back to Staffordshire to being the full renovation process.
With the backing of Chris Scarratt, Neil Andrews and many family friends and colleagues who knew their physics and could do the maths we sized up the weight of the main drum, the chassis , the chimney and front stack , fire box and wood holder and began the designs for an extendable removable chimney to ensure smoke would not compromise the chef at work and the counterweight balance for the main smoker door.
Meanwhile my sister Liv set to work helping me design logos and artwork to decorate the Smoker and promote my brand. Contacts in the trade led to Dave Rees, our new fabricator contact, to help forge all the new metal work and designs to enhance the smoker and make it efficient to run. Peter Lawrie, the blacksmith designed and created the unique framework and a three piece bespoke handcrafted metal log basket to add at the back. A beautiful hand-crafted wood shelf was added, designed and created by local craftsman Jorden Peters.
18 months later with adaptions to the trailer to make sure it could be transported easily to external events and many layers of spraying and additional airbrushing artwork by Simon and bespoke lighting effects to add that night time road show “wow” factor by Dave, the Smoker was ready for it’s first outing.
Our champagne launch event was on Saturday 20th May 2023, with 50 friends and colleagues who had supported the dream coming to New Farm, Hanbury to enjoy a showcase menu of American/Asian and Moroccan meats and flavours. Our first season, Summer 2023 was underway!
